SIGNAL HILL – VINOTHEQUE – PINOT NOIR 2006 – WO Stellenbosch
This pinot noir has been produced from our own vineyard in Sir Lowry's Pass village, a blend of clone 113 and 112 and a touch 777, planted in 2001. This un-irrigated vineyard, planted at a high density of 6000 vines per hectare yielded 1400 bottle for the vintage 2006.
Winemaking: Fermented at a high temperature in an open wood tank, then matured in 5 years old barrels for 18 months, this pinot was very austere and tannic when released in 2008, this wine was mostly sold to France and Spain for restaurants.
Tasting: Not a full bodied wine, definitely more spiritual than physical, it offer to 2021 drinkers the best experience ever from vintage.Definitely a food wine with a tight nose then, the few bottles we kept in our vinotheque now show an generous cherry and red berries character, with a long supple palate held together by a mineral texture.
Sold by pack of 3 bottles, not necessarily a wine to keep for 10 extra years but this Pinot noir is far from being on the way down, the freshness of the optimal maturity makes it a very classic pinot.
Production: Very limited quantities, but a mature elegant wine at an incredible price.
